We make this every time we have to bring a covered dish somewhere. I really thought I posted this, but I looked back through and didn't see it.
Quick Easy Chicken Salsa Rice
1 tablespoon vegetable oil
4 (about 1 1/4 pounds total) boneless, skinless chicken breast halves, cubed
1 teaspoon garlic powder
2 cups instant white or brown rice
1 jar (16 ounces) mild salsa
1 1/4 cups water
Directions
HEAT oil in stockpot. Add chicken and garlic powder; cook, stirring occasionally, until chicken is no longer pink.
ADD rice, salsa, water and bouillon; bring to a boil. Cover; reduce heat to low. Cook, stirring occasionally, for 10 to 12 minutes or until rice is tender and liquid is absorbed.
OPTIONAL: Top with shredded cheese and sour cream and scoop up with tortilla chips.

Unintentional Saurkraut
-Half a head of white cabbage
-Teaspoon of oil
-'Some' vinegar
-Salt
-Pepper
-ABJECT DISMAY
Chop and sautee white cabbage in oil, adding salt and pepper to deliciousness. Feel pleased with self over how delicious and awesome it is, decide it needs some 'ZANG!'. Pour some vinegar in. Taste. Make a sad face when you realize you've created Saurkraut.

Cooookies. Chocolate oatmeal chocolate chip. Quick and easy and simple!
- 1 box German Chocolate Cake mix
- 2 eggs
- 1 cup rolled oats
- 1/2 cup oil
- Lots of chocolate chips
* Large mixing bowl or stand mixer
* Two cookie sheets
1) Preheat oven to 350°F
2) Combine all ingredients and blend well
3) Make balls of dough and place ~2" apart on ungreased cookie sheet
4) Bake for 8-12min, depending on size of balls
5) Let cool
6) Eat!

Dinner tonight was fantastically tasty slow-cooker carnitas:
3-4 pounds well marbled pork (I used "country ribs")
2/3 can beer
1 large onion
3 guajillo chiles
4 chipotle chiles (canned are fine)
Half head of garlic, peeled
salt, pepper
cumin, oregano, dash of cinnamon, 2 bay leaves
Toast the dried chiles (if the chipotles are from a can then just the guajillos), then soak for 10-20 minutes.
Trim any excess fat from the pork. Cook some down in a skillet, reserve the rest for later.
Pat the pork dry, add salt and pepper, and sear in the skillet with the fat until nicely browned.
Dice the onion, throw in a crock pot. Add the soaked chiles (chopped), the garlic, the bay leaves, the spices, and the beer. Add the seared pork on top. Cook on low for 6 hours, going in once in the middleish to give everything a good stir.
Take the pork out (it will be falling apart). Throw away the bay leaves, skim the fat from the remaining contents, blend it (this is chiles, garlic, onions, beer, and pork drippings), and put it in a sauce pan to reduce. Shred the pork with two forks, throwing out any chunks of fat from the cooker.
Once the sauce has reduced down to a decent thickness, put the uncooked pork fat from before in a skillet and get a nice layer of rendered fat down. Use this to quickly fry the shredded pork, pouring the sauce in shortly before you're done.
Turn into tacos of the gods.
